Ingredients

2 lbs. Romaine Lettuce
3 lbs. Mesclun mix
1 lb. Spinach

Equipment

  • Knife
  • Cutting board
  • Salad spinner
  • Deep hotel pan
  • Foodservice gloves

Preparation

  1. Remove any damaged leaves from the lettuce.
  2. Cut the romaine into 1" x 1" pieces.
  3. Wash and "spin dry" all the lettuce.
  4. Mix the lettuces to blend.
  5. Place in a container, cover, label and refrigerate until needed.
