2 | lbs. | Romaine Lettuce |
3 | lbs. | Mesclun mix |
1 | lb. | Spinach |
Equipment
- Knife
- Cutting board
- Salad spinner
- Deep hotel pan
- Foodservice gloves
Preparation
- Remove any damaged leaves from the lettuce.
- Cut the romaine into 1" x 1" pieces.
- Wash and "spin dry" all the lettuce.
- Mix the lettuces to blend.
- Place in a container, cover, label and refrigerate until needed.
