BBQ Pulled Chicken Sandwich

Ingredients

1 ea. Brioche burger roll
6 oz. BBQ pulled chicken prep (2 #12 scoops)
1 oz. Sweet onion marmalade

Equipment

  • Knife
  • Cutting board
  • Mesh screen
  • Spatula
  • Foodservice gloves

Preparation

  1. Cut the brioche roll in half – horizontally.
  2. Open the roll, place the bottom on the cutting board.
  3. Place BBQ Chicken on the bottom roll, place this and top of roll (top side down) on MerryChef pan.
  4. Cook in MerryChef for 1 minute and 20 seconds. Settings: 475°F 100% fan / 40% microwave).
  5. Remove the sandwich from the oven, top the chicken with the sweet onion marmalade.
  6. Place the top of the roll on the chicken, pick the sandwich to hold it together.

PLATING
DINE-IN: Place sandwich on the Cardinal R 0864 oval plate.

TO-GO: Wrap sandwich with the Euro Craft Sandwich Wrap 300897 and place in large brown paper bag.
